The Integral Winemaking or fermentation of the grapes in barrels .

Imagined byr barrel BARON, and OXOLINE ®, the Winemaking Integral ® is the culmination of years of research and experiments combining tradition and modernity .
It allows obtaining a wooded wine at the end and full agreement of red fruits, with hints of vanilla .

After the passage through érafloir, only grains, whole, are entonnés directly into the barrel.

The rotation barrels daily during the alcoholic fermentation is the crux of the development of our wine

Very few growers who use this type of winemaking, which requires a lot of time, attention, a chai good size, a large stock of barrels also ......

 


The support from barrel roller, rotates daily drums: the grains were re-suspended, and the temperature is limited naturally around 26°.

Malolactic fermentation follows the alcoholic fermentation without delay, and livestock takes place gently for 12 months .

Some regulars raking, and a final settling tanks of 4000 litres, resulting in a wine limpid, requiring little filtration before bottling .
